1 pound skinless chicken breast, cut into 1 inch cubes
1 pound andouille sausage
1 28 oz. can diced tomatoes with juice
1 onion, chopped
1 green bell pepper, chopped
1 cup celery chopped
1 cup chicken broth
2 t dried oregano
2 t dried parsley
2 t cajun seasoning
1 t cayenne pepper (for the bold, I am!, you can use more of this)
1/2 t dried thyme
1 pound frozen cooked shrimp, preferably without tails
In slow cooker, mix the chicken sausage tomatoes onion bell pepper celery and broth. Add oregano, parsley, cajun seasoning, cayenne and thyme. Cover and cook 7 to 8 hours on low. Stir in shrimp during last 30 minutes of cook time. Serve over steamed rice. yummy! (picture coming next time I make it!)
