Roasted Garlic Zucchini and Tomatoes


2 zucchini cut in half lengthwise and then cut into 1/2 inch slices

2 cups ripe tomatoes, diced

1/2 onion, minced

3 cloves garlic, minced

1/2 t crushed red pepper flakes

1/4 cup olive oil

salt to taste

pepper to taste

1/2 cup Parmesan cheese, grated

1 T Basil, chopped

Preheat over to 450.  Lightly grease 9x13 inch baking disk.

Combine zucchini, tomatoes, onion, garlic and red pepper flakes in baking dish.  Drizzle with olive oil.  Add salt and pepper to taste.  Mix well.

Roast until vegetables are tender and slightly golden, 18-20 minutes.  Remove from oven and sprinkle with parmesan and basil.  DELICIOUS!
