Featured Recipe: Garlic Roasted Chicken

This is the moistest roasted chicken I have ever had. I believe the secret is wrapping it in parchment paper while it roasts.
1 whole chicken for roasting
Salt and Pepper to taste
1 Large Lemon, sliced
6 cloves garlic, sliced
6 thyme sprigs
Preheat oven to 325. Season chicken with salt and pepper. Place half of lemon slices in chicken cavity. Spread garlic evenly over the chicken. Place thyme sprigs on top of chicken,. Place remaining lemon slices over the chicken. Wrap with Parchment paper. Bake 1 1/2 to 2 hours until thermometer reads 180F.
Ummm. delicious.
